Back in the day, schools taught home economics, but now if you want to learn how to bake it's youtube, expensive culinary school or weekend workshops. Our program is intended to teach students a little of everything in the kitchen to help them build confidence and share age old wisdom and learn to cook Mama's famous recipes.
We celebrate many of the unique crops here in Hawai'i processing cacao and coffee, but also focus on the types of skills that last a lifetime-anywhere you live. Using herbs, making pickles, baking bread, and processing meat and vegetables are some of the kitchen skills students learn on campus. Our program focuses on real-life, useful techniques taught by a team of instructors, including our award-winning Chef Instructor, Kristen Davis. Ask nicely and she'll tell you about her time on competing on Chopped.
Our course descriptions can be found on our curriculum list.
